“Moo Bars”

So I don’t know about you, but I can have a pretty mean sweet tooth. I also can never plan ahead and buy the groceries that I need- so when the sweet tooth strikes I have to get creative! I took to the panty and was able to scrape up cookie dough, coco powder and some cream cheese. What unfolded was a happy accident of brownie, cookie, cheesecake, and chocolate ganache! Do to the mix of colors my husband decided to call the “Moo Bars”. Whatever floats your boat baby.

Here’s the recipe for the cure to your craving:

Moo Bars

Ingredients:

Pre-made Chocolate Chip Cookie Dough

For brownie batter:

1/3 cup Coco Powder

1 cup Cane Sugar

1/2 cup Coconut Flour

1/4 tsp Salt

1/4 tsp Baking Powder

1/2 cup Butter (melted)

2 Eggs

1 tsp Vanilla Extract

For cheesecake batter:

1 tsp Vanilla Extract

1 8oz block of Cream Cheese (softened)

1/3 cup Cane Sugar

For ganache:

1/2 cup Coconut Oil (melted)

1/2 cup Dark Coco Powder

2 Tbsp Agave Nectar

Directions:

Cookie Crust:

Pre-heat the oven as directed on the cookie dough. Spray a 9×9 glass dish and flatten the cookie dough into the bottom. Bake as directed on cookie packaging.

Brownie Batter:

In a bowl sift together the Coco Powder, coconut flour, sugar, salt, and packing powder. In a separate bowl beat 2 eggs and incorporate into the dry ingredients. Slowly add in the melted butter while stirring.

Cheesecake Batter:

Blend the softened cream cheese until smooth. Add eggs, sugar, and vanilla. Mix until smooth.

Once the cookie crust is baked, allow to cool for 5 minuets. Dollop the brownie batter onto the cookie crust- don’t spread! Now pour the cheesecake batter over top to fill in the crust. Bake at 425 degrees for 25-30 minuets. While baking you can make the ganache.

Chocolate Ganache:

Melt the Coconut Oil until liquid (about 30 seconds in the microwave). With a whisk mix in the Coco Powder and Agave nectar. Whisk until smooth and shiny.

After your Moo Bars are done baking, allow to set for 2 minuets then spread the ganache on top. Chill in the fridge and serve cold or eat them right out of the pan!
